Accor Hotels and Orbisk collaborate on food waste reduction initiative

Accor Hotels et Orbisk collaborent

Accor is implementing a strategic initiative to combat food waste in collaboration with Orbisk, with the aim of reducing food waste by 50%. Thanks to this partnership, Orbisk’s food waste control system will be introduced in hundreds of Accor hotels worldwide.

Orbisk’s technology uses artificial intelligence to help chefs accurately measure and minimize food waste in their kitchens. Initial trials in 10 European hotels have shown a promising 22% reduction in food waste in just 6 months. The initiative is part of Accor’s wider sustainability objectives, which include reducing food waste by 60% across all its hotels by 2030.

“Thanks to our partnership with Orbisk, our objective is now within reach”, “In hotels using Orbisk, we have noticed that food waste has become an important issue in the eyes of kitchen teams. The ecological and financial impact is considerable, especially as the project is deployed on a global scale” – Amy Ferguson, Vice President Global Luxury and Lifestyle Solutions and Partnerships at Accor.

Deployment of Orbisk’s solution will begin with Accor’s 300 largest hotels, with plans to extend to all mid-range properties by the end of 2024. Orbisk’s system uses AI image recognition technology to track ingredients discarded, quantities and when they are used, providing valuable insights through an intuitive dashboard. This data enables kitchen teams to optimize food use efficiently, while ensuring minimal waste without compromising customer satisfaction.

“Working with Orbisk has helped our hotels achieve this year’s food waste target. All now have clear benchmarks and are ready to reduce their waste to achieve a 60% reduction by 2030.” – Léa Bensaadoune, Fairmont Sustainable Development Manager

Orbisk’s monitors, known as “Orbi”, have received positive feedback from Accor’s kitchen teams, with a score of 8.2/10 for overall efficiency and an impressive 9 for ease of use.

Given that 1.3 billion tones of food are wasted worldwide each year, equivalent to a third of total food production, Accor’s approach to reducing food waste represents an important step in promoting a more sustainable hotel industry.

“As well as being unnecessary and extremely bad for our environment, it has a major impact on the profitability of establishments in this sector, especially with high food prices” “We’re delighted that leading players in the food industry are making this happen today. The Accor Group is a forerunner in the fight against large-scale food waste, and is among the first hotel chains to take action in this direction. Each hotel will soon save between 15 and 70 tonnes of CO2 emissions per year, making the total impact of our collaboration considerable. In just a few years’ time, food waste at current levels will be a thing of the past. To imagine that in 2023, food was simply thrown away will become unthinkable.” – Richard Beks, co-founder of Orbisk.
