This February, our recipes banked on shortcuts to help us get dinner on the table in a snap. Take, for example, these peachy chicken thighs that rely on bagged frozen fruit to speed up prep time. Because the frosty peaches are pre-peeled, pitted, and sliced, all you have to do is reduce them into a jammy sauce. Also on the list: these herby cauliflower fritters that use frozen riced cauliflower. The frozen bits get mixed with tender herbs, Parmesan, and panko before the balls are sizzled until they’re crispy and golden.
