Apricot Almond Galette

The combination of buttery crust, sweet apricots and nutty almonds will transport your tastebuds to a realm of pure bliss. This elegant dessert is perfect for any occasion, from a casual afternoon tea to a special dinner party

Ingredients

1½ cups all-purpose flour
½ cup unsalted butter, cold and cubed
¼ cup granulated sugar
¼ cup granulated sugar
1 cup apricot jam
1 cup apricots, sliced
½ cup almonds, sliced
2 tbsp apricot jam
1 tbsp water

Method

Preheat oven to 175°C.
In a food processor, combine the flour, cold butter, granulated sugar and cold water. Pulse into a coarse crumb.

Transfer the mixture onto a lightly floured surface and knead into a smooth dough. Shape the dough into a disc, wrap it in plastic wrap and refrigerate for 30 mins.

Afterwards, on baking paper, roll the dough into a pizza-size circle, roughly 12 inches.

Spread the apricot jam evenly over the pastry, leaving a 3cm gap around the edges.

Arrange the sliced apricots on top of the jam in a decorative pattern. Sprinkle the sliced almonds over the apricots.
Bake the tart in the oven for 30-35 mins or until the crust is golden brown and the apricots are tender.
Meanwhile, prepare the glaze. In a microwave-safe small dish, heat the apricot jam and water for 20 secs in the microwave, stirring until smooth. Set aside.

Remove the galette from the oven and let cool for a few mins. Brush the glaze over the apricots and almonds.

Allow the galette to cool completely before serving with ice cream.

Tip: Sprinkle some additional sliced almonds on top for added crunch and visual appeal.
