Berry Chia Pudding

This is one of my favourite things to meal prep at the start of the week for a quick and nutritious breakfast or snack (or even dessert!) While chia can seem expensive, a little goes a long way and it can work out to as little as 25 cents per serve! There are not many other foods that can compete with that for the nutritional punch it packs as it’s a great source of fibre, protein and omega-3s.
Ingredients
500mL plant milk
1/3 cup chia seeds
1 tbsp vanilla essence or extract
½ cup berries, plus a few extra to garnish
½-1 cup coconut yoghurt
Method
Pour the milk into a medium-sized mixing bowl and slowly whisk in the chia seeds and vanilla. Keep whisking until they are thoroughly mixed to ensure there are no clumps of chia. Allow to rest for 15 mins or so for the chia to absorb the liquid and expand, whisking occasionally.
Stir in most of the berries, saving a few to place on the top.
Ladle into bowls or jars and top with the yoghurt and extra berries — jars are great to keep on hand so they are easy to grab on your way out the door. They will keep for up to 5 days in the fridge.
