Burmese Air-Fried Chicken & Dipping Sauce

A healthy alternative to fried chicken with staple herbs and spices. This can be a tasty snack or a meal with rice and salad.
Ingredients
600g chicken thigh fillets, chopped into 3cm-long strips
Cooked rice
Mixed lettuce leaves
Coriander, to taste
Spray cooking oil
1 tsp turmeric powder
1 tsp paprika
1 tsp garlic salt
1 tsp ginger powder
3 tbsp plain flour
½ tsp chilli powder
3 tbsp soy sauce
1 tsp fish sauce
½ tsp chilli powder (optional)
Juice 1 lime
2 tsp minced ginger
Method
In a medium-size bowl, combine all dry rub ingredients. Add in the chicken and toss until well coated.
Lightly spray seasoned chicken with light cooking oil and cook in an air fryer for 15 mins on 180°C. Turn chicken halfway through to ensure both sides are cooked evenly.
While chicken is cooking, combine all dipping sauce ingredients in a small bowl and set aside.
Once chicken is done, plate up with rice, a bed of mixed lettuce and dipping sauce.
Top with coriander to taste and serve immediately.
Tip: Use drumsticks as an alternative to thigh fillets, but double the spice rub mix for 1-1.2kg drumsticks.
