Sweet Chilli Tender Caesar Slaw Tacos

Ingredients

6 x mini tortilla wraps
2 tbsp lemon juice
1 x packet Plantein Sweet Chilli Tenders
1 tbsp soy sauce
3 cups lettuce, chopped
1 tbsp maple syrup
3 cups lettuce, chopped
1 tbsp olive oil
1 cup carrot, finely sliced
¼ tsp white vinegar
1 cup kale, chopped
½ cup celery, finely sliced
½ cup beetroot, finely sliced
1 tbsp Dijon mustard
2 tbsp nutritional yeast
½ cup mayonnaise
2 tsp capers

Method

Preheat the oven to 180°C. Remove tenders from packaging and place onto a parchment-lined baking tray. Bake for 10-15 mins or until cooked through.

Meanwhile, for the sauce, add all ingredients to blender. Blend until smooth.

When ready to serve, assemble each tortilla with
a selection of chopped veggies, tenders, and drizzle generously with Caesar dressing. Enjoy!
