Vegan Carnitas Bowl

These jackfruit carnitas are very similar in look and texture to pulled pork and have a delicious, deep, earthy flavour thanks to the marinade.
Ingredients
2 tins jackfruit, drained & roughly pulled apart with forks
2 tsp cumin
2 tsp salt
½ tsp dried oregano
½ tsp onion powder
¼ tsp ground black pepper
1 tsp garlic
½ tsp Mexican chilli
375mL bottle beer
Method
Place the ingredients into a large bowl and stir to combine.
Cover and marinate in the fridge for at least 2 hours.
Preheat your oven to 200°C and line a large oven tray.
Drain the jackfruit and spread it out in a thin layer on your tray.
Bake for 15-20 mins. Finish off under a hot grill to get those lovely, caramelised edges.
Serve as a big carnitas bowl with lettuce, spinach, tomato, cucumber, coriander, lime wedges and dairy-free sour cream.
