Tomato basil pesto sauce
Serves 15
Tip: To make this sauce in a hurry, use canned, diced tomatoes with no added salt instead of fresh Roma tomatoes. They will cook down faster.
    Add 1/4 cup olive oil.
    Add 4 minced garlic cloves.
    Add 1/4 cup red wine vinegar.
    Saute 2 minutes.
    Add 8 cups diced Roma tomatoes.
    Add 1/2 cup tomato paste.
    Add 12 chopped fresh basil leaves.
    Add 1 tablespoon sugar.
    Add 1/2 teaspoon salt.
    Add 1/4 teaspoon ground pepper.
    Simmer 8 to 10 minutes until tomatoes break down.
    Add 1/2 cup grated Parmesan cheese.
    Process until smooth.
