How to Make the Black Cake from Hulu’s ‘Black Cake’

Just in time for the series premiere of Black Cake, we’re making author Charmaine Wilkerson’s recipe.

The story of Black Cake is moving from book to screen with an adaptation from Marissa Jo Cerar and Oprah Winfrey’s Harpo Films. The brand-new Hulu show spans decades, continents and generations to unfold the hidden life of Eleanor Bennett. It begins in Jamaica, which is also home to the namesake dessert.

To celebrate show’s premiere, we’re making Eleanor’s black cake recipe!

What’s in black cake?

This recipe is chock-full of rum-soaked fruit, much like a holiday fruitcake. Ideally the fruit is soaked for four months, though in a pinch you can soak the fruit overnight. The cake also has a special addition of blacking, which is caramelized dark brown sugar, which comes through in the deep, rich flavor of the cake.

How to Make Black Cake

Ingredients

2-1/2 cups flour
3/4 cup bread crumbs
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 or 1 teaspoon salt
1 teaspoon mixed spice (cinnamon and allspice)
1 cup cane sugar
2 cups butter, room temperature
2 teaspoons vanilla
1 dozen eggs
2 cups dark brown sugar
1/4 cup boiling water
5-6 cups fruit, soaked in rum and port for at least 24 hours but up to 4 months
Maraschino cherries, optional

Editor’s Tip: For the fruit, use red and golden raisins, prunes, currants and dates soaked in white or dark rum and port.

Directions

Step 1: Mix ingredients

Preheat oven to 350°F.

In a medium bowl, combine flour, bread crumbs, baking powder, baking soda, salt and mixed spice.

In the bowl of a mixer, beat the cane sugar and butter together until it’s smooth and fluffy, about 3 minutes. Then add vanilla and mix until combined.

Add one egg to the sugar and butter mixture; mix well. Then add about a scoop of the flour mixture and beat until just combined. Repeat until all the eggs and flour are gone.

Step 2: Make blacking

In a heavy-bottomed medium pot, heat the brown sugar on low heat while stirring continuously. When the sugar is totally melted and begins to caramelize, remove from heat and add the boiling water. Quickly mix together until fully combined.

Carefully add the blacking to the cake batter and mix until fully incorporated.

Step 3: Add the fruit

Strain your fruit to remove any extra soaking liquor. Chop up half the fruit in a blender or food processor. Add all of the fruit to the batter and mix well.

Grease two 9″ round pans. Line each with a circle of parchment paper cut to fit the bottom of the pan. Fill the pans 3/4 full with batter, then use a spatula to smooth the top of the cake.

Step 4: Bake off

Place both pans in the preheated oven. Add a separate pan filled with water to the oven. Bake for 60-75 minutes or until a toothpick inserted in the middle comes out dry.

Top with maraschino cherries and enjoy.
