Do you always have the same thing for breakfast?
Maple breakfast tacos offer a mix of sweet and savoury flavours. It sees tortillas, fried eggs, kidney beans and topped with a hint of maple syrup and green chilli sauce.

Ingredients
For the maple syrup and green chilli sauce:
2 green peppers8 green chillies10g coriander2 kiwi fruit1 garlic clove13g grated ginger2 limes, juiced120ml pure maple syrup
For the tacos:
4 tortillas4 fried eggs2 tbsp olive oil1 red onion, sliced4 chopped tomatoes2 garlic cloves, crushed1 tbsp pure maple syrup1 can of kidney beanssalt and pepper, to taste1 tbsp chopped coriander1 bag rocket salad1 lime, cut into wedges

Method
Firstly, to make the maple syrup and green chilli sauce you can put all the ingredients together but leave out the maple syrup. Then put them all into a blender to turn it into a chunky sauce.
Add the sauce into a shallow saucepan, then add the maple syrup and 100ml water. Bring this to a simmer for around 15 minutes. Only stir occasionally until the sauce becomes syrupy.
Try not to burn the sauce and continue to simmer. Continue to stir it constantly for 5 more minutes and until it has reduced.
Add the sauce into a sterilised jar.

Next, for the tomato sauce, add some olive oil to a saucepan on medium heat. Then, add the onion and cook until it’s clear.
Then add the chopped tomatoes, garlic and maple syrup.
Cook this for 5 minutes and add the kidney beans. Season with salt and pepper. For the tacos, preheat them in the oven to 180°C. Cook for 5 minutes or until they are crispy.
Assemble the tacos by putting 3 tbsp of tomato sauce on each taco. Top them each with a fried egg 1 tsp of maple syrup and green chilli sauce. You can garnish them with chopped coriander, rocket and lime wedges.
